In a large bowl combine the flour and salt. In a measuring jug mix the warm water and oil together, then add to the flour.
Stir together until all the ingredients are well combined and form a dough.
On a floured surface, knead the dough for 3 minutes. Divide the dough into 8 equal balls, then roll out each one individualy. Each tortilla should be a similar size to a dinner plate, as the dough will shrink a little while it's resting.
In a large frying pan warm a teaspoon of oil and cook each tortilla for 1 minute each side on a medium heat. Each side should just start to brown on any raised areas. Let cool to one side.
To make the tortilla crisps, heat oven to 200°C/180°C fan/Gas Mark 6. Brush both sides of the tortillas with oil, then cut into triangles with scissors. Arrange in a single layer on 2 baking sheets, then bake for 7-8 mins.
Remove, sprinkle with seasoning and set aside.
