Super quick and easy! Served as a side salad for moussaka or double the recipe and add grilled chicken or tofu.
Quarter the cucumbers and de-seed by using a spoon or melon baller, remove the middle seed section and discard. Cut into strips and add to a bowl with the olives. Roughly dice the onions and halve the tomatoes.
Mix well.
Before serving, crumble the feta, drizzle with the olive oil and season well.
Serve with mint (optional).
