Ingredients
2 eggs
400ml buttermilk
2 litres vegetable oil
8 chicken drumsticks
250g plain flour
2 teaspoon salt
1/2 tablespoon basil
1/2 tablespoon thyme
1 teaspoon celery salt
1 teaspoon oregano
1 tablespoon dried mustard
1/2 ground black pepper
2 tablespoons garlic salt
2 tablespoons paprika
1 tablespoon white pepper
1 tablespoon ginger
In a large mixing bowl, beat the eggs into the buttermilk before adding the chicken drumsticks and leaving them to chill for 1 hour.
In another bowl, combine the flour with all the 11 herbs and spices. Roll the soaked chicken drumsticks in the flour and herb mixture, shaking off any excess. In a large saucepan, heat the vegetable oil to 170°C (325˚F) and then reduce the heat to low. Fry the chicken a few pieces at a time for around 15 minutes or until the skin turns golden brown. Transfer the chicken to a towel-lined serving dish to soak up any excess oil.
Side note: Enjoy with corn on the cob and beans for a traditional fried chicken feast!
